Smoky BBQ Chicken
Ingredients:
4 chicken breasts or thighs, bone in
1 small jar organic tomato paste
1 tsp. smoked paprika
2 tbsp. olive oil
1 tsp. crushed red pepper
dash each of black pepper and sea salt
Directions:
1. Preheat the oven to 350 degrees, or fire up the grill.
2. Combine sauce ingredients together in a small mixing bowl.
3. Brush sauce on both sides of chicken.
4. If baking, place chicken skin side up in a baking dish or Pyrex. If grilling, place chicken skin side up on grill.
5. Cook for 30 minutes, turning after 15 minutes.
6. Remove from heat and cut into the largest portion of the chicken to be sure it is cooked all the way through. Cook longer if needed.
7. Allow to cool for 5 minutes before brushing with one last coat of sauce.
