When I was first learning about nutrition, I was a complete novice in the kitchen. I made some inedible stuff. My college friends can tell you about it. So, lacking skills and confidence, I lived on a short list of boring foods.
Luckily for me, an amazing cook moved in with me, and he taught me how to mix and match ingredients and spices to create endless deliciousness and be time efficient in the process.
As my practice grew and I had less and less time to cook, I started eating more restaurant and convenience food. I wasn't walking my talk and the belly bloat and fatigue let me know it!
To feel better and save money, I had to find a rhythm with planning, shopping and prepping food ahead of time, so that meals came together fast.
Being a health coach, I felt even more guilty not walking my nutrition talk, but I was also in the unique position to really do something about it.

Question: "I like meat. Does healthy mean I have to be vegan?"
Actually, Richele and I are enthusiastic omnivores (we feel best eating animal proteins) and our menus reflect our love of meat, fish, and eggs. With that said, there is no more important food group for amazing health than VEGETABLES, and our menus are FULL of delicious vegetable recipes that will help mineralize your body, improve your digestion and protect you from disease. We also include a wide variety of whole grains and beans, along with fruits and healthy fats like coconut, avocado, olives, nuts and seeds.
Question: "Will you tell me what to eat every meal?"
No. The packets cover 4 dinners with plenty left for lunch the next day. They include 4 entrees and sides, along with unique ideas and recipes for breakfast, snack and dessert. Our original menus did cover every single meal and snack for the week. We quickly got feedback that it was too much food. Inevitably, you will eat a meal or two out. You'll want to include some of your old favorite recipes as well. Your menu packet gives you a fantastic head start to have a kick-ass week.
Question: "How much time will this take?"
You have 2 options. If you prep multiple dishes ahead of time (like Richele and I do), dinners over the following days can come together in 15 minutes. If you prep from scratch each night, plan on 30 minute meals. The recipes make 4 adult servings, so you'll get 2 meals out of 1.
Of course, time is dependent on a number of other factors like how sharp your knife is and your kitchen skills/confidence. Meet yourself where you are "at" and take on only so much new cooking as you have time for.
Question: "What if I don't know how to cook?"
If you are a beginner, never fear. All our recipes are simple. You'll have the menu bundle forever, so there is no need to rush. Instead, you will begin by selecting only the number of new recipes that you feel comfortable with. After all, a little bit of nutrition is better than no nutrition!
