Top 5 Reasons to Eat Chocolate

Guilt Free!

I am talking about organic, fair-trade, RAW cacao of course… not the inferior stuff you find tempting you in the grocery store check out line.

1. You Get Phenomenal Nutrition

Anti-Oxidants- Raw Cacao and cold pressed cacao products have anti-oxidant score of 95,500 ORAC- 14 times more antioxidant flavonoids than red wine, 21 times more than green tea, and 7 times more than the more processed dark chocolate!

Magnesium- Cacao is possibly the number one source of magnesium: one of the great alkaline minerals. It helps to support the heart, brain, and digestive system; balances brain chemistry, builds strong bones; helps to relax nerves and muscles and also helps to keep blood circulating. Magnesium is the most deficient major mineral on the Standard American Diet (SAD).

Chromium- an important trace mineral that helps balance blood sugar. Nearly 80% of Americans are deficient in this trace mineral. Cacao has enough chromium to help reverse deficiencies in this mineral.

Manganese, Copper, Zinc, Iron and more…

2. Buying Real Cacao Supports Small Farmers Around the World

Look for Fair Trade Cacao products from companies like www.NaturalZing.com and you can enjoy chocolate all while practicipating in economies that support all people, not just megacorporations. Industrial cacao growing operations often use child labor and in some places claims of slave labor have even surfaced.

3. Buying Real Cacao Protects the Rainforest

Unlike monoculture farming, small farmers growing organic cacao plants grow in the natural ecosystem, surrounded within rich biodiversity, and conserve the nature and land they inhabit. As their cocoa farms expand, so does the conservation of native rainforest. Huge industrial cacao farms have been hit hard by fungus recently- because of the unnatural isolation of the plant from its natural ecosystem and the depletion of soils.

4. It Tastes Amazing

Chocolate has 400 distinct flavour compounds – that’s 200% more than any other food! It cannot be synthesized. The exotic flavoured ‘criollo’ variety we feature in our class represents only 1% of world production and is the highest priced in international commodity markets.

5. It Makes You Feel GREAT!

Phenylethylamine (PEA)
- created within the brain and released when we fall in love, and also help increase focus and alertness.

Appetite suppressant - likely as a result of it’s unusual MAO inhibitors

Allows more serotonin and other neurotransmitters like anandamide (the bliss chemical) to circulate in the brain

Video Interview with Luke coming soon!

The mission of Baltimore Health Coach is to support inspired, purposeful people (“Difference Makers”) to create the high energy, vibrant health, and peace of mind necessary to make a major positive impact in the world, and to enjoy their lives more than ever. Through individualized nutrition and lifestyle programs clients establish a powerful daily and weekly rhythm with self-care that fuels the creation of an increasingly extraordinary life.

How did I become the Baltimore Health Coach?

I discovered my passion for healthy living as I finished up my undergraduate studies at Eckerd College.   At the time, I was very angry about the injustices I saw in the world, but unsure of how I could do anything much about it.   I was highly critical of myself and everyone around me. I was unfulfilled in my relationships with family and friends, and my “romantic” relationships never lasted more than a few months.  I stayed up late nights stressing.  Low level anxiety and frustration was the norm.  At times, I was quite depressed.

I thought it was just my bad genes, but I was suffering from fatigue, chronic digestive disruption, allergies and colds, frequent sports injuries, and skin infections.   That’s when both my father and brother experienced major health scares.   I felt powerless to help them and it seemed like the drugs doctor were prescribing were causing more harm than good.

I started reading books about healing.

I was shocked to find out:

– Most dis-ease has much more to do with lifestyle than genes.
– Food profoundly affects our health.
– The body is highly intelligent and will heal itself given half a chance.
– We are designed to experience high energy, vibrant health and peace of mind.

Wow!  I was not well at all- far from it. I also realized that the back surgery that ended my sports career was completely unnecessary.  I felt like I had been cheated out of a healthy and energized childhood and adolescence. I was pissed!  And I was hopeful that I could create a new experience of health and vitality.  And- I saw that so many people could benefit from what I was learning- I had an inspiring new career direction!

I was determined to learn all I could about nutrition and healing and to heal myself.  After several disappointing years of struggling to maintain deprivation diets that seemingly made me feel worse, I found the Institute for Integrative Nutrition (IIN).

Through the very process I facilitate for my clients, at IIN, I discovered my most energizing and healthful way of eating, and living.  I learned it will always be evolving, and how to keep up with it.  I discovered that my health and energy had as much to do with my thoughts and emotions as what I had eaten all my life; and that what I had eaten all my life had more to do with my thoughts and emotions than I ever could have imagined.

The more I learn about the interconnectedness of it all, and how much power we have as individuals to transform our health, the more inspired I get.

My life is completely transformed from 7 years ago. As I write this, I am in a beach coffee shop in Costa Rica. I have taken the month off to surf and write. I am in a supportive, loving, juicy romantic relationship with a fabulous woman.  Most days I have bountiful energy and vibrant health. Even more fantastic is that the majority of my moments are peaceful and happy, despite all the work there is to do.

As the Baltimore Health Coach, my work feeds me tremendously. I make a major difference in the world: coaching highly intelligent and committed people to step into their power, reach their full potential, and make their biggest impact.

We harness incredible power when we align our thoughts and actions, including what we eat, with our bodies’ truth and our heart’s deepest desires. Quality of life, not perfectionism, is the focus. Good health and happiness are the foundations of life. With added clarity of purpose, knowledge, and major support, I believe anything is possible.

Vitamin D Deficiency

Are You At Risk?

Low blood levels of Vitamin D have been strongly associated with higher risk for and incidences of:

  • Rickets
  • Autism
  • Rheumatoid Arthritis
  • Multiple Sclerosis
  • Many other Auto-Immune Disorders
  • Cancers
  • Infections and Viruses
  • Seasonal Depression
  • Crowded teeth
  • By design, the human body makes Vitamin D in the skin in reaction with sunlight. However, latitudes north of 30 degrees do not receive intense enough sunlight during most of the year. As a result, Vitamin D deficiency (70% of Americans) is widespread!

Vitamin D is stored in the blood for a few weeks and in the fat for a few months. Serum 25(OH)D levels generally drop by 20 percent to 30 percent during winter in mid-latitudes and the prevalence of D deficiency increases markedly.

    Function of Vitamin D

The major biologic function of vitamin D is to maintain normal blood levels of calcium and phosphorus. Vitamin D aids in the absorption of calcium, helping to form and maintain strong bones. But there is more…

There are only 30,000 genes in your body and vitamin D has been shown to influence over 2,000 of them. That is one of the primary reasons it influences so many diseases, from cancer and autism to heart disease and rheumatoid arthritis.

Internationally recognized research scientist and vitamin D expert, Dr. William Grant, Ph.D. led a study that found that about 30 percent of cancer deaths could be prevented each year with higher levels of vitamin D.

Vitamin D also regulates the expression of genes that influence your immune system to attack and destroy bacteria and viruses. It produces over 200 anti-microbial peptides, the most important of which is cathelicidin, a naturally occurring broad-spectrum antibiotic. Research shows that it is very rare for someone with optimized vitamin D levels to come down with the flu.

    Get Your Levels Tested

Get your levels tested, especially if you are experiencing any symptoms or low energy.

Make sure that you request the 25(OH)D test DiaSoron assay, and not the 1,25(OH)D test from Quest Labs. The New York Times recently published an article about how the latter produces many false readings, resulting in doctor’s prescribing insufficient dosages. Take control of your own health, and make sure your doctor is up on the latest research. Many doctors have had little to no nutrition education and are simply not up to date. Read the research through the links below and consider these ranges recommended by my teacher Dr. Joseph Mercola, DO.

    Food sources of Vitamin D

Food sources of Vitamin D are limited, and not likely to supply you with sufficient amounts.

Lard is a decent source of D, but make sure its from a naturally raised pig. Cold-water ocean fish such as salmon, sardines, herring, and mackerel have vitamin D in the skin, organs and fat under the skin, around the fins and at the tail. However, most of us are unaccustomed to eating these parts. Two other downsides are that fish bio-accumulate mercury and other toxins, and the world’s fish supply is rapidly being depleted.

Milk and orange juice are often fortified with Vitamin D, but typically with the potentially problematic version D2.

    Cod Liver Oil

Cod Liver Oil is no longer recommended for reaching optimal D levels. Because the optimal level may require much higher dosages than previously thought, reaching those levels with CLO would result in likely overdose of Vitamin A, which is also toxic if levels go too high.

    Optimizing Vitamin D Levels

The best option is to sun yourself daily with as much skin exposed as possible, just until the skin turns light pink. Do not burn!

However, this is insufficient in the Fall, Winter and Spring for those of us living north of 30 degrees latitude.

In the non-Summer months, other than food sources, we have two options:

    UVB lamps
I never thought I’d be considering it, but sources I trust recommend the use of tanning or non-tanning UVB lamps

I provided a link below in the resource section for you to learn more about this option.

    Oral Supplementation

Personally, I supplement with oral Vitamin D3 made by Carlsons. Be careful! Reaching the optimal levels requires different dosages for different people, and Vitamin D can be toxic because it is fat soluble.

Test your blood levels, and work with a doctor to push to optimal levels. (especially if you are not well)

    Avoid D2, Use D3

Unlike D3 which is found naturally in animal products, D2 is a synthetic analogue of Vitamin D, with different characteristics.

According to Dr. Mercola, DO, it is inappropriate to regard Vitamin D2 as a vitamin. Almost all the current toxicity data refers to Vitamin D2, not D3.

    Who Should Avoid Vitamin D?

If you have sarcoidosis, tuberculosis, or lymphoma, request the 1,25(OH)D test before you supplement with any sun exposure or oral vitamin D, as it is a better indicator in people with these health challenges.

    I am Your Advocate

Have you been wanting to turn all the best nutrition and lifestyle practices into lifelong habits that you love? I am an expert in the approach to lifestyle change that works. While I support you to make realistic, yet powerful step-by-step upgrades to your way of eating, I will also advocate for you and your family in your relationships with your doctors. Doctors are typically incredibly busy and have had little-to-no training in nutrition and holistic health.

    My Gift to You

Let’s have a conversation about your plan for creating high energy and vibrant health. Contact me at lucas.seipp@gmail.com or 443-418-9534 to set up a complimentary 50-minute break through session.
